Bon Appetit!

One of the reasons we joined the CSA this year (the collective where we get our basket of fresh, organic veggies every week)  was that we thought it would make us more adventurous in the kitchen as we’d have to work out how to cook the veggies we get- and it’s worked!

This week our share included tomatillos and Jackie used them this evening to make chicken enchiladas with a tomatillo salsa verde. I’ve just had 2 helpings and could happily eat more, but if I do there won’t be any for lunch tomorrow.

Now Jackie sometimes accuses me of not being appropriately complimentary about her cooking, so let me take this opportunity to say publicly that this (and all the meals she prepares, but especially those with the bounty from the CSA and the farmer’s market)  is delicious! I am incredibly lucky to be married to a woman who can put a meal like this together, that she’s never cooked before, from scratch, based on 2 or 3 recipes from the internet, and after a hard day’s work!
